Chicken Mirch Masala

 
 
Cooking Time: 20 minutes
Serving for: 4persons
            INGREDIENTS:
1.     Chicken boneless ½ kg (cut into cubes or can use with bone)
2.     Onion chopped 1
3.     Ginger and garlic paste 1 tsp
4.     Tomato paste 3 Tbsp
5.     Red chilli powder 1 and ½ tsp
6.     Turmeric powder ¼ tsp
7.     Black pepper powder ½ tsp
8.     Garam masala powder ½ tsp coriander powder 1tsp
9.     Green chili 1 slit
10.  Capsicum 1  cut into long strips
11.  Salt to taste
12.  Oil 5 Tbsp
METHOOD:
·        In a non stick pan add oil then onion chopped fry till transparent
 
·        Then add ginger and garlic paste fry it
 
·        Then add chicken boneless, fry for 2 minutes
 
·      Add tomato paste, red chilli powder,turmeric,pepper powder, garam masala, coriander powder salt and mix well and cover and cook till chicken is done
 
·        Last add green chilli , capscium,little water and cook for more 5 minutes
 
·        Garnish with coriander leaves
 

Chicken Gravy Masala

 
 
INGREDIENTS:
1.     Chicken ½ kg (cut into medium pieces)
2.     Onion1 sliced
3.     Ginger and garlic paste 1 Tbsp
4.     Fresh coconut or dedicated 2 Tbsp
5.     Cashew 10 or khus khus 2Tbsp
6.     Sesame seeds 1 Tbsp (optional)
7.     Green chili paste 1 Tbsp (  taken 4 green chillies)
8.     Red chili powder 1 tsp
9.     Garam masala  powder ½ tsp
10.   Tomato puree or tomato paste 3 Tbsp
11.   Yogurt 1 cup
12.   Water ( add according to the gravy )
13.    Salt to taste
14.    Oil 6 Tbsp
15.    Coriander leaves chopped 1 Tbsp
16. Mint leaves 1 Tbsp chopped
METHOD:
·        In a non stick vessel add oil fry sliced onion till light brown and take it off and grind into smooth paste with adding little water, keep aside
 
·        Mean while  roast coconut, cashew and sesame seeds in a pan and then grind into smooth paste with adding little water and keep a side
 
·        In same vessel add ginger and garlic paste fry well then add coconut cashew paste and mix well
 
·        Then add green chilli paste, red chilli powder, garam masala powder,coriender leaves, mint leaves, brown onion paste, tomato puree or paste and stir well till oil comes on the top
 
·        Then add yogurt and continues stirring for 3 minutes
 
·        Add chicken and water, cover and cook in medium low heat for 20 minutes
 
·        Keep in stirring in between
 
·        Last garnish with coriander leaves

Chicken Donuts

 
 
INGREDIENTS: (FOR DOUGH)
1.     Maida 1 and ½ cup
2.     Yeast 1tsp
3.     Sugar 1tsp
4.     Salt 1tsp
5.     Egg 1
6.     Oil 2 Tbsp
7.     Warm water
METHOD:
·        In a large bowl add all ingredients 1 to 6 and with little warm water make smooth dough and cover and keep for 2 hours or till dough rise
 
INGREDIENTS :( FOR FILLING)
 
1.     Butter 1tbsp
2.     Onion finely chopped 2 Tbsp
3.     Chicken breast cubed 1 cup (small cubes)
4.     Salt to taste
5.     Black pepper powder ½ tsp
6.     Milk ¼ cup
7.     Coriander leaved 1 Tbsp
8.     Green chilli 1 finely chopped
9.     Oil for deep frying
10.  Egg 1 beaten (to dip the donuts)
 
METHOD:
·        In a pan add butter add onion fry till soft
·        Then add small cubes of chicken fry for 5 minutes
·        Then add salt ,black pepper powder ,milk ,coriander leaves and green chilli and cook for 3 minutes
·        Cool it
HOW TO MAKE CHICKEN DONUTS
·        After keeping dough for rising for 2 hours, punch down it
 
 
·        And roll it
·        And with the cutter cut into small circle
 
 
·        Take 1 circle flatten with hand
 
 
·        And fill little filling in the center
 
 
·        Spread little water on the edges
·        Top with 1 more circle and press it
 
 
·        Make rest the same
 
 
·        Then dip in beaten  egg
·        Deep fry it
·        Serve hot with chilli sauce
NOTE:
·        Can use any filling of your choice

Red Hot Chicken Masala

 
 

Cooking Time: 20 minutes

Serving For: 4 persons

INGREDIENTS:

1.     Chicken ½ kg (small pieces)

2.     Kashmiri chilli 8 (soak in water for 2 hours and cut and remove all seeds)

3.     Onion 2 chopped

4.     Ginger and garlic paste 1 Tbsp

5.     Tomato puree 1 cup (puree 2 large tomato)

6.     Tomato chopped 2

7.     Garam masala powder 1 tsp

8.     Coriander powder 1 tsp

9.     Water 1 to 2 cups

10.   Cashew nut or peanut powder

11.   Salt to taste

12.   Oil 6 Tbsp

METHOD:

·   First grind  together deseeded kashmiri chilli and onion into smooth paste(don’t add water)
 

·   In a non stick vessel add oil add Kashmiri chilli and onion paste, sauté for 5 minutes
 

·   Then add ginger and garlic paste sauté for few seconds
 

·   Then add tomato puree and tomato chopped and sauté for 6 minutes
 

·   Then add garam masala , coriander powder, salt  and chicken
 

·   Fry it till oil seen on the surface this will take almost 10 minutes
 

·   Then add 1 to 2 cups water and cover and cook the chicken completely
 

·    Last add cashew nut or peanut powder
 

·    Serve hot with chapatti,roti,puri

Clover Roll

 
 
Makes: 10 rolls
INGREDIENTS:
1.     Maida (flour) 2 cups
2.     Instant yeast  1 and ½ tsp
3.     Oil ¼ cup
4.     Egg 1
5.     Salt ½ tsp
6.     Sugar 2 Tbsp
7.     Luke warm water as required
METHOD:
·    In bowl add all ingredients 1 to 6 and make smooth dough with adding Luke warm water
 
·    Knead well for 5 to 10 minutes
 
·    Keep in warm place for rising for 2 hours
 
 
 
·    After 2 hours knead back
 
·    And divide the dough into 10 balls
 
 
 
·    Then again divide each ball into 3 balls
 
 
 
·    And place 3 balls in each greased muffin tray, follow the same with other dough
 
 
 
·    And again keep in warm place for rising for 30 minutes
 
 
 
·    Then bake in preheated oven for 10 to 15 minutes for 200c
 
·    After 8minutes take out the tray spray little water and bake again
 
·    Serve with pav bhaji ,butter chicken or any thing
