INGREDIENTS:
1. Cauliflower ½ cup (cut into small pieces)
2. Potato ½ cup (cut into cubes)
3. Carrot ½ cup( cut into cubes)
4. Green peas ¼ cup (boiled)
5. Fry onion paste (fry 1 onion in 2 tsp of oil till brown and grind into smooth paste)
6. Tomato puree (grind 1chopped tomato into smooth paste)
7. Onion ½ (cut into cubes)
8. Capsicum ½ (cut into cubes)
9. Onion ½ finelly chopped
10. Bay leaves 1
11. Ginger garlic paste 1 Tbsp
12. Red chilli paste or red chilli powder ½ tsp
13. Green chilli paste 1 tsp
14. Turmeric powder ½ tsp
15. Coriander powder 1 tsp
16. Garam masala powder 1 tsp
17. Kusturi methi 1 tsp
18. Cashew 10 (paste)
19. Oil
20. Salt to taste
METHOD:
· In a pan add oil and fry potato ,cauliflower, carrot one by one and keep aside
· In a same pan add oil fry chopped onion till light brown ,then add bay leave and ginger garlic paste mix well
· Then add tomato puree, red chilli powder ,green chilli paste ,turmeric powder, coriander powder, garam masala powder, salt and Kusturi methi keep the heat low and fry
· Then add cashew nut paste and ½ cup water mix well
· In other pan add little oil and fry cubed onion and capsicum for few seconds
· Then add fried onion paste, green peas and 1 tsp of chopped ginger garlic mix well
· Add this mixture to the above gravy ,mix well and keep covered for 5 minutes in low heat
· If the gravy is too thick then add little warm water
· Garnish with coriander powder
· Enjoy veg Kolapuri with paratha or roti
