Dahi Vada




INDREDIENTS:
FOR THE VADA BATTER:
1.     Urad dal 1 cup (black gram split skinless) -soaked in water for 3 hours
2.     Ginger ½ tsp (chopped)
3.     Green chilli 1 or 2 (chopped)
4.     Salt to taste
5.     Oil for deep fry
METHOD:
·        Wash the Urad dal and in grinder add Urad dal,ginger,salt,green chilli and grind into smooth paste add little water if required so that a thick batter is made
·        Transfer the batter into a bowl and mix the batter with hand
·        Heat oil in a kadai on medium low heat
·        Make walnut size balls of the batter and release gently into the oil. Fry 5 balls at a time. Fry till light brown (adjust the heat if they are getting brown too soon)
·         After all the vadas is made then drop all the vadas in a salt water(salt water means –take a deep big bowl add water and salt)
·        After the vadas is soaked for about 10 – 15 minutes squeeze the vadas between your palms lightly (taking care not to break the vadas)and place them in a serving dish
INGREDIENTS:
FOR THE DAHI (YOGHURT):
1.     Dahi (yoghurt) 2 and ½ cup or almost 300g
2.     Salt to taste 1tsp
3.     Sugar 5 -6 Tbsp or to your taste
4.     Roasted cumin powder 1tsp
5.     Red chilli powder for garnish
6.     Chat masala 1tsp (optional) for garnish
7.     Coriander for garnish
8.     water
METHOD:
·        Whisk the yoghurt along with salt ,sugar and, cumin powder add little water (yoghurt should not be too thin or too thick)
·        Check the taste of yoghurt it should be little sweet if need  more sweet then add more sugar and salt if required
·        Then pour the dahi (yoghurt)over the vadas and refrigerate for 30 minutes
·        Garnish with chopped coriander leaves ,cumin powder, chat masala and red chilli powder
