Pav Bhaji

Pav bhaji is one of the most popular dishes of Mumbai. I make this dish when I am bored of eating chicken, beef, paneer; for a change I make it for dinner. We can also have for evening snacks.


INGREDIENTS:
1.   Potatoes 2 chopped
2.   Capsicum 1 chopped
3.   Cauliflower 1 cup chopped
4.   Green peas ¼ cup
5.   Onion 1 grated
6.   Tomato1 finely chopped
7.   Ginger, garlic and green chilli paste 1Tbsp
8.   Red chilli powder 1tsp
9.   Turmeric powder 1/2tsp
10.   Pav bhaji masala 1Tbsp
11.   Coriander leaves
12.   Salt to taste
13.   Lemon juice ½ tsp
14.   Oil
15.   Butter
METHOD:
·    In a pressure cooker add chopped potatoes, chopped capsicum, chopped cauliflower, green peas, salt, turmeric powder and water cook for 3 to 4 whistle. Let it cool. Drain  and mash it with potato masher

·    In a pan add oil and butter then add grated onion fry till it turn pink then add ginger, garlic, green chilli paste then chopped tomato cook till tomato is soft

·    Then add red chilli powder,pav bhaji masala and 1/2 cup of water cook till the oil separates

·    Then add boiled vegetables, lemon juice and coriander leaves

·    Check the salt and heat  in low flame for 5 minutes

·    Garnish with finely chopped onion,lime and butter
Note:
·    I used mother’s pav bhaji masala

·    Cut the pav horizontal and swear one side of the pav with butter. Heat a pan  and sauté the pav on both sides for 30 seconds
