Onion and Tomato Uttappam



INGREDIENTS (FOR THE DOSA):
1.     White rice 1 cup
2.     Urad dal (skinless) ¼ cup
3.     Boiled rice ½ cup
4.     Methi seeds (fenugreek seeds) 1 tsp
5.     Salt
METHOD:
·        Soak the white rice ,Urad dal,methi seeds in bowl for 5 -6 hours
·        Then wash and grind it all together with salt, boiled rice and almost ½ cup of water
·        The batter should not be too thick of too thin
·        Then keep covered for 12 to 14 hours .preferably over night
INDREIENTS (FOR THE TOPPING):
1.     Onion 1 chopped
2.     Tomato 1 chopped
3.     Curry leaves few chopped
4.     Coriander leaves chopped
5.     Green chilli 1 chopped
6.     Salt
METHOD:
·        Mix ingredients 1 to 6 in a bowl and keep aside
PREPARING THE UTTAAPPAM:
·      Add a little water  to the batter if required, so that it become of spreading consistency

·      Heat a tava, preferably of the non-stick variety, on medium heat

·      Take a ladle of batter and pour it in center, then quickly spread the batter on the tava in a circular motion with the bottom of the ladle

·      Then spread evenly the veg mixture on the top of the dosa and press it with light hand

·      After about 20 second .sprinkle 1 tsp of oil on the dosa

·      And turn it ,again sprinkle ½ tsp of oil and press the dosa with the spatula

·      After few seconds remove the uttappam from heat and serve hot with chutney
