INGREDIENTS: (FOR THE DOSA)
1. White rice 1 cup
2. Urad daal (black gram split skinless) ¼ cup
3. Rice ½ cup (boiled)
4. Water ½ cup
METHOD:
· Wash and soak no 1, 2 , for 8 -9 hours
· Then grind white rice,urad daal,boiled rice and water into smooth batter
· Cover and keep in room temperature for ferment overnight or 9 – 12 hours
· Time depends upon the room temperature. This batter will increase in volume and become a little bubbly
INGREDIENTS: (FOR THE FILLING)
1. Onion 1 small finely chopped
2. Chicken ¼ cup (boiled and shredded)
3. Garlic paste ½ tsp
4. Pepper powder ½ tsp
5. Curry leaves 1 tsp chopped
6. Coriander leaves 2 tsp
7. Salt to taste
8. Spring onion 1 string finely chopped (optional)
9. Oil
METHOD:
· In a non stick pan add 1 tsp of oil, then add onion fry till it turns pink
· Then add garlic paste ,chicken, pepper powder ,salt, curry leaves, coriander leaves ,spring onion and mix well
· Remove from heat and let it cool
TO MAKE THE SAND WICH UTTAPPAM:
· After the batter is ferment for 9 -12 hours, the dose batter is ready to make
· Just before making dosa add salt and mix well
· Heat the tawa,preferably take non stick pan on medium heat
· Take a ladle of batter and pour it in center, then quickly spread the batter on the pan in a circular motion with the bottom of the ladle
· Then spread the filling, and cover it for few second then sprinkle 1 tsp of oil on the dosa
· When the bottom side of the dosa become crisp, fold it over and remove
· Serve hot
NOTE:
· You can make any filling you like
· You can also make this without chicken
· You can also add some grated carrot and capsicum
· Filling is of your choice
