Fish Biryani


There are different ways of making fish Biryani. In this fish Biryani I used 3 steps first to make the rice second step to fry the fish third step is to make the fish masala.
INGREDIENTS: (STEP 1)
FOR THE RICE:
1.     Basmati  rice 2 cups ( soak the rice for 30 minute and wash and drain all water)
2.     Water 4 cups
3.     Salt to taste
4.     Curry leaves few
5.     Coriander leaves 2 Tbsp
6.     Lime juice 1Tbsp
7.     Oil 2 Tbsp
8.     Ghee 3 Tbsp
METHOD:
·    In  a deep bottom non stick kadai add oil and ghee then add rice and roast slowly without breaking the rice then add water, lime juice ,curry leaves, coriander leaves and salt mix well
·    Then cover the kadai and cook in medium high heat
·    After 5 minutes reduce the heat and cook till rice is completely done
INGREDIENTS :( STEP2)
FOR THE FISH FRY:
1.     King fish 5 big pieces (washed)
2.     Salt to taste
3.     Red chilli powder 2-3 tsp
4.     Coriander powder 2 tsp
5.     Turmeric powder 1tsp
6.     Lime juice 1tsp
7.     Oil for fry
METHOD:
·     Mix all ingredients 1 -6 and marinate the fish for 10 minutes and shallow fry the fish and keep aside

INGREDIENTS :( STEP3)
       FOR THE FISH MASALA:
1.     King fish (fried)
2.     Onion 3 (chopped)
3.     Tomatoes 1 (chopped)
4.     Ginger and garlic paste 1 Tbsp
5.     Green chillies 4-5 (slit)
6.     Turmeric powder 1tsp
7.     Red chilli powder 1Tbsp
8.     Coriander powder 2 Tbsp
9.     Gram masala 1tsp
10.   Coriander leaves 2 Tbsp
11.   Curry leaves
12.   Fennel seeds 1 tsp
13.   Salt to taste
14.   Oil 4 -5 Tbsp
15.   Mint leaves chopped for garnish
16. Water 3-4 Tsp
METHOD:
·    In a non stick kadai add oil then add onion, curry leaves and fennel seeds and fry till light brown
·    Then add ginger garlic paste fry for few second  add tomato fry till soft after that add turmeric powder, red chili powder, coriander  powder , salt,gram masala,green chillies and coriander leaves
·    Then add water mix well then add 1 piece fish fry (break with your hand)
·    Add coriander leaves and mint leaves
FOR ASSEMBLY:
1.     Food colour yellow a pinch
2.     Rose water 2 tsp
METHOD:
·     First in a bowl add a pinch of yellow food colour and rose water mix well then add half of plain rice. Keep aside
·     In a large pan smear oil on all sides and bottom
·    Then spread the plain rice then on top add the fish masala
·    Then on top add yellow colored rice
·     Repeat the layer again
·     Last  on top place the fry fish (shown in photo)
·     Cover the pan with aluminum foil then the lid and cook in low heat for 10 -15 minutes
·      Fish Biryani is ready to eat
