Crispy Dosa with Tomato Chutney



INGREDIENTS:
FOR THE DOSA:
1.     White rice 1 cup
2.     Chana dal ½ cup
3.     Urad dal (black gram, split and skinless) 3 Tbsp
4.     Methi seeds(fenugreek seeds) 1tsp
5.     Oil or butter
6.     Salt to taste
7.     water
METHOD:
TO MAKE THE DOSA BATTER:
·        Soak the rice,chana dal,urad dal,methi seeds in a big bowl for 7-8 hours
·        Then grind all to gather to a smooth paste by slowly adding in water(approximately 1 cup)
·        Transfer the mixture to the big bowl and mix well with your hand
·        Leave to ferment for 8 -12 hours (the time depends upon the room temperature. This batter will increase in volume and become a little bubbly)
PREPARING THE DOSA:
·        Add salt and a little water to the batter if required, so that it become of spreading consistency
·        Heat a flat non stick tava on medium heat
·        Take a big spoonful of batter and pour it in center then quickly spread the batter on the tava in a circular motion with the bottom of the spoon
·        Keep for 20 seconds and then sprinkle some oil or butter on the dosa and lightly spread the oil or butter with a spatula
·        When the bottom side of the dosa become crisp and golden fold it over and remove
·        Serve hot with tomato chutney or Sāmbhar
INGREDIENTS:
FOR THE TOMATO CHUTNEY:
1.     Onion 1 small (chopped)
2.     Tomato 1 large (chopped)
3.     Red chilli powder 1 tsp
4.     Turmeric powder ½ tsp
5.     Salt to taste
6.     Oil 1 tbsp
METHOD:
·        In a pan add oil  then add onion fry till it turn pink then add tomato fry till soft then add red chill powder,salt,turmeric powder and fry for 2 minutes
·        Let it cool then grind all into smooth paste(don’t add water)
NOTE:
·        After making each dosa just wipe the tava with tissue or cloth
