Chicken Biryani

This is one of most awaited recipes.. all naheem's colleagues wanted this one from a long time .. at last here you go...!!!



INGREDIENTS:
FOR THE CHICKEN BIRYANI’S MASALA:
1.     Chicken ½ kg
2.     Onion 5 medium size (sliced)
3.     Tomatoes 1
4.     Ginger, garlic and green chilli paste 3Tbsp(greenchilli depends upon your taste)
5.     Turmeric powder 1tsp
6.     Coriander powder 3Tbsp
7.     Yoghurt(dahi) whisked ½ cup
8.     Coriander leaves 3Tbsp
9.     Mint leaves 3Tbsp
10.  Garam masala powder 1tsp
11.   Oil 4 Tbsp
12.   Salt
13.   Water ½ to 1 cup
METHOD:
·        In a heavy bottomed pan add oil then add onion fry till the onion turns light brown then add ginger, garlic and green chilli paste sauté for few seconds then finely sliced tomatoes fry till it is soft
·        Then add turmeric powder, chicken salt mix well and cook for 1 minutes
·        Then add garam masala, coriander powder, coriander leaves, mint leaves and 1 cup water. Cook covered in medium flame for 10 minutes
·        When the chicken is half cooked add yoghurt mix well again cook till the chicken is completely done
·        Again garnish with coriander leaves and mint leaves
INGREDIENTS:
FOR THE RICE:

·              Basmati rice 2 cups(soaked in water for 15 minutes)
·       Whole spices (bay leaves, 2 cloves, cinnamon stick)
·        Lemon juice 1tsp
·        Water 4 cups
·        Ghee4Tbsp
·        Salt to taste
·        Oil 1Tbsp
·        Yellow food colour a pinch
·        Rose water 1Tbsp
·        Onion 1small sliced(for garnish)
·        Cashew nut (for garnish)

METHOD:
·        In a heavy bottomed pan add ghee and oil fry onion till light brown and take it off..then add cashew nut fry till light brown take it out and keep aside for garnish
·        In same pan add whole garam masala
·        Then add the rice sauté for 3 minutes in medium flame the add the water,salt,lemon juice mix well .cover and cook till water absorb the rice
·        Let it cool .keep open
FOR ASSEMBLY:
·        First in a bowl add a pinch of yellow food colour and rose water mix well then add half of plain rice. Keep aside
·        In a large pan smear oil on all sides and bottom
·        Then spread the plain rice then on top add the Biryani chicken masala gravy
·        Then on top add yellow colored rice
·        Repeat the layer again
·        Last garnish with fried onion and cashew nuts
·        Cover the pan with aluminum foil then the lid and cook in low heat for 10 -15 minutes
·        Chicken Biryani is ready to eat

Note:  While assembling, do not add too much of Biryani chicken masala
